For the Crust:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 2 large eggs
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 1/2 cups grated carrots
- 1/2 cup chopped walnuts (optional)
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan and line with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, beat eggs, granulated sugar, brown sugar, oil, and vanilla until well combined. Stir in grated carrots and walnuts (if using).
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour batter into prepared pan and bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cool completely.
- For the frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
- Spread frosting over cooled bars. Refrigerate for at least 1 hour before slicing and serving.
