For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup sour cream
- 1 tsp vanilla extract
- 1 tbsp lime zest
- 2 tbsp lime juice
- 1 cup fresh blackberries
- 1/4 cup blackberry jam
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Line a muffin tin with cupcake liners.
- Mix graham cracker crumbs and melted butter. Press 1 tablespoon into each liner to form the crust.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, vanilla, lime zest, and lime juice.
- Fold in blackberries gently. Spoon filling over crusts, filling each liner almost to the top.
- Bake for 20-25 minutes until centers are set. Let cool, then refrigerate for at least 2 hours.
- Top each cupcake with a dollop of blackberry jam before serving.
