For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup fresh blackberries
- 2 tbsp lime juice
- 1 tbsp lime zest
- 1 tbsp cornstarch
- 2 tbsp water
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Line a muffin tin with 12 cupcake liners.
- Mix graham cracker crumbs and melted butter. Press 1 tbsp mixture into each liner to form crust.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Spoon over crusts.
- Simmer blackberries, lime juice, and zest until berries break down. Mix cornstarch and water; stir into compote until thickened. Swirl into cheesecake batter.
- Bake for 20-25 minutes until set. Cool completely, then refrigerate for at least 2 hours before serving.
