Decadent Blackberry Lime Cheesecake Cupcakes

Creamy cheesecake cupcakes with a graham cracker crust, swirled with a tangy blackberry lime compote and topped with a lime zest garnish.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh blackberries
  • 2 tbsp lime juice
  • 1 tbsp lime zest
  • 1 tbsp cornstarch
  • 2 tbsp water

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Line a muffin tin with 12 cupcake liners.
  2. Mix graham cracker crumbs and melted butter. Press 1 tbsp mixture into each liner to form crust.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Spoon over crusts.
  4. Simmer blackberries, lime juice, and zest until berries break down. Mix cornstarch and water; stir into compote until thickened. Swirl into cheesecake batter.
  5. Bake for 20-25 minutes until set. Cool completely, then refrigerate for at least 2 hours before serving.

Notes

You can customize the seasonings to taste.
