Decadent Blackberry Lime Cheesecake Cupcakes

Creamy cheesecake cupcakes with a graham cracker crust, swirled with a vibrant blackberry lime compote and topped with a tangy lime glaze.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blackberries
  • 2 tablespoons granulated sugar
  • Zest and juice of 1 lime
  • 1/2 cup powdered sugar
  • 12 tablespoons lime juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Line a muffin tin with 12 cupcake liners.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press 1 tablespoon into each liner to form crusts.
  3. Beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then vanilla. Divide batter among cups.
  4. Mash blackberries with 2 tablespoons sugar and lime zest/juice. Swirl into batter. Bake 20-25 minutes until set. Cool completely.
  5. Whisk powdered sugar and lime juice for glaze. Drizzle over cooled cupcakes. Chill 2 hours before serving.
