For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh blackberries
- 2 tablespoons granulated sugar
- Zest and juice of 1 lime
- 1/2 cup powdered sugar
- 1–2 tablespoons lime juice
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Line a muffin tin with 12 cupcake liners.
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press 1 tablespoon into each liner to form crusts.
- Beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then vanilla. Divide batter among cups.
- Mash blackberries with 2 tablespoons sugar and lime zest/juice. Swirl into batter. Bake 20-25 minutes until set. Cool completely.
- Whisk powdered sugar and lime juice for glaze. Drizzle over cooled cupcakes. Chill 2 hours before serving.
