- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup chopped almonds
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract

- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together oats, flour, baking soda, and salt. Stir in chopped almonds.
- In a separate bowl, cream together butter and brown sugar until fluffy. Beat in egg and vanilla.
- Gradually mix dry ingredients into wet ingredients until just combined.
- Drop rounded tablespoons of dough onto the baking sheet, spacing them 2 inches apart.
- Bake for 12-15 minutes, or until edges are golden. Let cool on the sheet for 5 minutes before transferring to a wire rack.
