- 1 pound mild ground Italian sausage
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 (6-ounce) can tomato paste
- 1 (14.5-ounce) can diced tomatoes with Italian herbs
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 9 ounces refrigerated cheese tortellini
- 2 cups baby spinach
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
Instructions
- In a skillet over medium heat, brown the Italian sausage with diced onion and minced garlic until sausage is cooked through and onions are translucent.
- Transfer the cooked sausage mixture to a 6-quart slow cooker.
- Add tomato paste, diced tomatoes with Italian herbs, chicken broth, Italian seasoning, salt, and black pepper to the slow cooker. Stir to combine.
- Cover and cook on low for 6 hours or on high for 3 hours.
- About 30 minutes before serving, add the cheese tortellini and baby spinach to the slow cooker. Stir well.
- Cover and cook on high for an additional 20-30 minutes until tortellini is tender.
- Stir in the heavy cream and grated Parmesan cheese just before serving. Adjust seasoning if needed.
Notes
For best flavor, brown the sausage and sauté the onions and garlic before adding to the slow cooker. Use a 6-quart slow cooker to comfortably fit all ingredients. You can substitute mild Italian sausage with hot sausage or ground chicken, turkey, or beef if preferred.
