For the Crust:
- 2 medium zucchinis, grated
- 2 medium potatoes, grated
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1/4 cup olive oil
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp paprika
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- Place grated zucchini and potatoes in a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, combine zucchini, potatoes, Parmesan cheese, flour, eggs, olive oil, garlic powder, salt, black pepper, and paprika.
- Mix until well combined.
- Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 25-30 minutes or until golden brown and crispy on top.
- Let cool for 5 minutes before removing from the tin.
