Crispy Chicken Tempura Roll with Avocado & Cucumber

A delicious sushi roll featuring crispy tempura chicken, creamy avocado, and refreshing cucumber.

For the Crust:

  • 2 cups sushi rice, cooked
  • 4 sheets nori (seaweed)
  • 1 chicken breast, cut into strips
  • 1/2 cup tempura batter mix
  • 1/2 avocado, sliced
  • 1/2 cucumber, julienned
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 cup vegetable oil for frying
  • Wasabi and pickled ginger (optional, for serving)

Instructions

1. Prepare the Crust:

  1. Heat vegetable oil in a pan over medium-high heat. Dip chicken strips in tempura batter and fry until golden and crispy. Drain on paper towels.
  2. Lay a sheet of nori on a bamboo sushi mat. Spread a thin layer of sushi rice evenly over the nori, leaving a 1-inch border at the top.
  3. Arrange tempura chicken, avocado slices, and cucumber strips horizontally across the rice.
  4. Roll the sushi tightly using the bamboo mat, pressing gently to seal the edge with a bit of water.
  5. Slice the roll into 8 pieces with a sharp knife. Repeat with remaining ingredients.
  6. Serve with soy sauce, wasabi, and pickled ginger if desired.

Notes

You can customize the seasonings to taste.
