  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 4 sheets nori (seaweed)
  • 1/2 cup all-purpose flour
  • 1 egg, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying
  • Soy sauce for serving
  • Pickled ginger and wasabi (optional)

Instructions

  1. Cook sushi rice with water according to package instructions. Mix rice vinegar, sugar, and salt in a small bowl, then fold into cooked rice. Let cool.
  2. Coat chicken strips in flour, dip in beaten egg, then coat with panko. Fry in hot oil until golden and crispy. Drain on paper towels.
  3. Lay a nori sheet on a sushi mat. Spread a thin layer of seasoned rice over nori, leaving a 1-inch border at the top.
  4. Place crispy chicken strips horizontally on the rice. Roll tightly using the mat, moistening the nori border to seal.
  5. Slice the roll into 6-8 pieces with a sharp knife. Repeat with remaining ingredients. Serve with soy sauce, ginger, and wasabi.
