For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 3 large eggs
- 1 tbsp vanilla extract
- 1/2 cup brown sugar (for topping)
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Mix graham cracker crumbs and melted butter, then press into a 9-inch springform pan.
- Beat cream cheese and granulated sugar until smooth. Add sour cream, eggs, and vanilla, mixing until well combined.
- Pour filling over crust. Bake for 45-50 minutes until center is set. Cool completely, then refrigerate for 4 hours.
- Sprinkle brown sugar evenly over chilled cheesecake. Use a kitchen torch to caramelize the sugar until bubbly and golden.
