			For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 ripe bananas, mashed
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/4 cup brown sugar (for topping)
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Mix graham cracker crumbs with melted butter and press into a 9-inch springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
- Fold in mashed bananas, then pour mixture over the crust. Bake for 45-50 minutes until set but slightly jiggly in the center.
- Cool completely, then refrigerate for at least 4 hours. Before serving, sprinkle brown sugar evenly over the top and caramelize with a kitchen torch.
- Let sugar harden for 2 minutes before slicing.
