Crème Brûlée Banana Cheesecake

A decadent fusion of creamy cheesecake, ripe bananas, and a caramelized sugar topping.

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 ripe bananas, mashed
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup brown sugar (for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Mix graham cracker crumbs with melted butter and press into a 9-inch springform pan.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
  3. Fold in mashed bananas, then pour mixture over the crust. Bake for 45-50 minutes until set but slightly jiggly in the center.
  4. Cool completely, then refrigerate for at least 4 hours. Before serving, sprinkle brown sugar evenly over the top and caramelize with a kitchen torch.
  5. Let sugar harden for 2 minutes before slicing.
