- 3 cups cooked, shredded chicken
- 8 ounces sour cream
- 10.5 ounces cream of chicken soup
- 1 ½ sleeves Ritz crackers, crushed
- ½ cup (1 stick) butter, melted
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large mixing bowl, combine sour cream, cream of chicken soup, shredded chicken, salt, and pepper. Spread evenly in the prepared baking dish.
- In another bowl, mix crushed Ritz crackers with melted butter.
- Sprinkle the cracker mixture evenly over the chicken mixture.
- Bake uncovered for 30 minutes or until the Ritz cracker topping is golden brown and casserole is bubbly.
- Let rest for 5 minutes before serving for best flavor and texture.
Notes
For extra flavor, you can add a pinch of garlic powder or onion powder to the chicken mixture. Use rotisserie chicken for convenience. This casserole pairs well with steamed vegetables or a fresh salad.
