For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 8 oz cream cheese, softened
- 1/4 cup sour cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups rhubarb, diced
- 1/4 cup granulated sugar
- 1 tbsp cornstarch
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- In a bowl, mix flour and 1/2 cup granulated sugar. Cut in butter until crumbly. Press into the prepared pan and bake for 15 minutes.
- In another bowl, beat cream cheese, sour cream, powdered sugar, and vanilla until smooth. Spread over the baked crust.
- Toss rhubarb with 1/4 cup sugar and cornstarch. Sprinkle over the cream cheese layer.
- Bake for 25-30 minutes or until rhubarb is tender. Cool completely before cutting into bars.
