For the Crust:
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup graham cracker crumbs
- 1/2 cup shelled pistachios, finely chopped
- 1/2 cup white chocolate chips, melted
Instructions
1. Prepare the Crust:
- In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Fold in graham cracker crumbs until well combined.
- Roll mixture into small balls (about 1-inch diameter) and place on a parchment-lined tray.
- Freeze for 30 minutes to firm up.
- Dip each ball in melted white chocolate, then roll in chopped pistachios.
- Chill for another 15 minutes before serving.
