For the Crust:

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup graham cracker crumbs
  • 1/2 cup shelled pistachios, finely chopped
  • 1/2 cup white chocolate chips, melted

Instructions

1. Prepare the Crust:

  1. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  2. Fold in graham cracker crumbs until well combined.
  3. Roll mixture into small balls (about 1-inch diameter) and place on a parchment-lined tray.
  4. Freeze for 30 minutes to firm up.
  5. Dip each ball in melted white chocolate, then roll in chopped pistachios.
  6. Chill for another 15 minutes before serving.
