For the Crust:
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup sweetened shredded coconut
- 1/2 cup chopped pecans
- 1/2 cup semi-sweet chocolate chips, melted
- 1/2 cup caramel sauce
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Mix cookie crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla.
- Fold in coconut and pecans. Pour half the batter over the crust. Drizzle with melted chocolate, then top with remaining batter.
- Bake for 50-55 minutes or until center is set. Cool completely, then refrigerate for at least 4 hours.
- Drizzle with caramel sauce before serving.

You can customize the seasonings to taste.
