- 1 lb boneless, skinless chicken breasts
- 1 cup uncooked white rice
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1 large onion, diced
- 2 large bell peppers, diced
- 1 packet fajita seasoning
- 1 can diced tomatoes with green chilies
- 1 tsp olive oil
Instructions
- Preheat oven to 350°F.
- Sauté the peppers and onion in olive oil until the onion is translucent.
- Add chicken, rice, soup, salsa, cream cheese, half of the cheese, sour cream, and fajita seasoning. Stir until creamy.
- Transfer the mixture to a 9×13-inch baking dish, cover with foil, and bake for 15-20 minutes.
- Remove foil, top with remaining cheese, and bake for an additional 5 minutes or until cheese is melted.
