Chicken Fajita Casserole

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup uncooked white rice
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1 large onion, diced
  • 2 large bell peppers, diced
  • 1 packet fajita seasoning
  • 1 can diced tomatoes with green chilies
  • 1 tsp olive oil

Instructions

  1. Preheat oven to 350°F.
  2. Sauté the peppers and onion in olive oil until the onion is translucent.
  3. Add chicken, rice, soup, salsa, cream cheese, half of the cheese, sour cream, and fajita seasoning. Stir until creamy.
  4. Transfer the mixture to a 9×13-inch baking dish, cover with foil, and bake for 15-20 minutes.
  5. Remove foil, top with remaining cheese, and bake for an additional 5 minutes or until cheese is melted.

Notes
