For the Crust:
- 8 oz pasta (rotini or penne)
- 1 lb lump crab meat
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp Cajun seasoning
- 1 tbsp lemon juice
- 1/2 cup diced celery
- 1/2 cup diced red bell pepper
- 1/4 cup chopped green onions
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, whisk together mayonnaise, sour cream, Cajun seasoning, lemon juice, and minced garlic.
- Add the cooled pasta, crab meat, celery, red bell pepper, and green onions to the bowl. Gently toss to coat evenly.
- Season with salt and pepper to taste. Cover and refrigerate for at least 1 hour before serving.
- Stir well before serving and garnish with additional green onions if desired.
