For the Crust:
- 8 oz rotini pasta
- 1 lb lump crab meat
- 1 cup mayonnaise
- 1/4 cup sour cream
- 2 tbsp lemon juice
- 2 tsp Cajun seasoning
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 1 red bell pepper, diced
- 1/2 red onion, finely diced
- 2 celery stalks, diced
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Cook pasta according to package directions. Drain and rinse with cold water to stop cooking.
- In a large bowl, whisk together mayonnaise, sour cream, lemon juice, Cajun seasoning, smoked paprika, and cayenne pepper.
- Gently fold in crab meat, bell pepper, red onion, celery, and parsley.
- Add cooled pasta to the bowl and toss until evenly coated with the dressing.
- Season with salt and black pepper to taste. Refrigerate for at least 1 hour before serving.
