Creamy Cajun Crab Pasta Salad

For the Crust:

  • 8 oz rotini pasta
  • 1 lb lump crab meat
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp lemon juice
  • 2 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 1 red bell pepper, diced
  • 1/2 red onion, finely diced
  • 2 celery stalks, diced
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook pasta according to package directions. Drain and rinse with cold water to stop cooking.
  2. In a large bowl, whisk together mayonnaise, sour cream, lemon juice, Cajun seasoning, smoked paprika, and cayenne pepper.
  3. Gently fold in crab meat, bell pepper, red onion, celery, and parsley.
  4. Add cooled pasta to the bowl and toss until evenly coated with the dressing.
  5. Season with salt and black pepper to taste. Refrigerate for at least 1 hour before serving.

Notes

You can customize the seasonings to taste.
