For the Crust:
- 2 cups vanilla wafer cookies, crushed
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup mashed ripe bananas
- 1 cup whipped topping
- 1 box instant banana pudding mix
- 1 1/2 cups cold milk
- Additional whipped topping and banana slices for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- Mix crushed vanilla wafers with melted butter. Press firmly into the bottom of the prepared pan to form the crust.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Fold in mashed bananas.
- Pour cheesecake mixture over crust. Bake for 25-30 minutes until set. Let cool completely.
- Whisk pudding mix with cold milk until thickened. Fold in whipped topping. Spread over cooled cheesecake layer.
- Chill for at least 4 hours. Garnish with whipped topping and banana slices before serving.
