Creamy Banana Pudding Cheesecake Bars

A delicious fusion of banana pudding and cheesecake in a convenient bar form.

For the Crust:

  • 2 cups vanilla wafer cookies, crushed
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 box (3.4 oz) instant banana pudding mix
  • 1 1/2 cups cold milk
  • 2 ripe bananas, sliced
  • 1 cup whipped topping

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. Mix crushed vanilla wafers with melted butter. Press firmly into the bottom of the prepared pan to form the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, mixing well after each addition.
  4. Pour cream cheese mixture over the crust and bake for 25-30 minutes until set. Let cool completely.
  5. Whisk pudding mix with cold milk for 2 minutes until thickened. Spread over cooled cheesecake layer.
  6. Arrange banana slices over pudding layer, then spread whipped topping over bananas.
  7. Refrigerate for at least 4 hours before slicing into bars. Serve chilled.

Notes

You can customize the seasonings to taste.
