			For the Crust:
- 2 cups vanilla wafer cookies, crushed
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 box (3.4 oz) instant banana pudding mix
- 1 1/2 cups cold milk
- 2 ripe bananas, sliced
- 1 cup whipped topping
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- Mix crushed vanilla wafers with melted butter. Press firmly into the bottom of the prepared pan to form the crust.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, mixing well after each addition.
- Pour cream cheese mixture over the crust and bake for 25-30 minutes until set. Let cool completely.
- Whisk pudding mix with cold milk for 2 minutes until thickened. Spread over cooled cheesecake layer.
- Arrange banana slices over pudding layer, then spread whipped topping over bananas.
- Refrigerate for at least 4 hours before slicing into bars. Serve chilled.
