- 1 cup all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1 cup fresh cranberries
- 2 large eggs
- 2 tablespoons lemon juice
Instructions
- Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour and sugar. Add cold butter cubes and mix until crumbly. Press into a tart pan evenly across the bottom and up the sides.
- Bake the crust for about 15 minutes or until lightly golden.
- In a saucepan over medium heat, combine cranberries, sugar, lemon juice, and eggs. Cook until cranberries burst (about 10 minutes).
- Blend the mixture until smooth, then pour into the baked crust.
- Bake again for 20-25 minutes until set in the center.
- Cool at room temperature, then chill in the refrigerator for at least two hours before serving.
