Cranberry Curd Tart

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1 cup fresh cranberries
  • 2 large eggs
  • 2 tablespoons lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour and sugar. Add cold butter cubes and mix until crumbly. Press into a tart pan evenly across the bottom and up the sides.
  2. Bake the crust for about 15 minutes or until lightly golden.
  3. In a saucepan over medium heat, combine cranberries, sugar, lemon juice, and eggs. Cook until cranberries burst (about 10 minutes).
  4. Blend the mixture until smooth, then pour into the baked crust.
  5. Bake again for 20-25 minutes until set in the center.
  6. Cool at room temperature, then chill in the refrigerator for at least two hours before serving.
