- 6 slices bacon, chopped
- 2 tablespoons butter
- 1 medium onion, diced
- 2 medium carrots, diced
- 3 cloves garlic, minced
- 4 cups peeled and diced potatoes
- 4 cups chicken stock
- 1 cup diced cooked ham (optional)
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- Cook bacon in a large pot over medium heat until crispy. Remove bacon and set aside, leaving bacon fat in the pot.
- Add butter, diced onion, and carrots to the pot. Cook until softened, about 5 minutes.
- Add minced garlic and cook until fragrant, about 1 minute.
- Add diced potatoes and chicken stock. Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes until potatoes are tender.
- Stir in diced cooked ham if using, and cook for an additional 5 minutes.
- Ladle soup into bowls, top with crispy bacon and shredded cheddar cheese, and serve warm.
Notes
For extra creaminess, you can blend part of the soup before adding the ham. Adjust salt and pepper to taste. This soup pairs well with crusty bread for a full meal.
