Country Apple Fritter Bread

A deliciously moist bread filled with cinnamon-spiced apples and topped with a sweet glaze.

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 2 large apples, peeled and diced
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup brown sugar
  • 1/4 cup powdered sugar
  • 1 tablespoon milk

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, salt, and 1 teaspoon cinnamon.
  3. In another bowl, toss diced apples with remaining 1 teaspoon cinnamon.
  4. In a large bowl, cream butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  5. Alternately add flour mixture and milk to the butter mixture, beginning and ending with flour. Fold in apples.
  6. Pour half the batter into the prepared pan. Sprinkle with half the brown sugar. Repeat layers.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean. Cool in pan for 10 minutes, then transfer to a wire rack.
  8. Mix powdered sugar and 1 tablespoon milk to make glaze. Drizzle over cooled bread.
