For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup cotton candy flavored baking chips
- 1/4 cup rainbow sprinkles
- 1/4 cup crushed cotton candy (for topping)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture, mixing until combined.
- Fold in cotton candy baking chips and rainbow sprinkles until evenly distributed.
- Scoop tablespoon-sized portions of dough onto prepared baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes or until edges are lightly golden. Remove from oven and immediately press crushed cotton candy onto the tops of the warm cookies.
- Let cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
