For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup shredded coconut
- 1/2 cup unsalted butter, softened
- 1/3 cup granulated sugar
- 1 large egg yolk
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup pineapple jam or preserves
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, shredded coconut, and salt.
- In a separate bowl, cream together butter and sugar until light and fluffy. Mix in egg yolk and vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
- Roll dough into 1-inch balls and place on the baking sheet. Press your thumb gently into the center of each ball to create an indentation.
- Fill each indentation with about 1/2 teaspoon of pineapple jam.
- Bake for 12-15 minutes or until edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
