For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3/4 cup coconut milk
- 2 large eggs
- 1 tbsp vanilla extract
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup shredded coconut
- 1/2 cup chopped pecans
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Combine flour, baking powder, and salt in another bowl. Gradually add to creamed mixture, alternating with coconut milk, mixing just until combined.
- Fold in shredded coconut and chopped pecans. Pour batter into prepared pan.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Cool in pan for 10 minutes, then transfer to a wire rack.
