Coconut Milk Mini Cheesecakes

Creamy and light mini cheesecakes made with coconut milk for a tropical twist.

For the Crust:

  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 1 tbsp sugar
  • 16 oz cream cheese, softened
  • 1/2 cup coconut milk
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Line a muffin tin with paper liners.
  2. Mix graham cracker crumbs, melted butter, and 1 tbsp sugar. Press into the bottom of each liner.
  3. In a bowl, beat cream cheese until smooth. Add coconut milk, sugar, eggs, vanilla, and salt. Mix well.
  4. Pour filling over crusts, filling each liner about 3/4 full.
  5. Bake for 20-25 minutes or until set. Let cool, then refrigerate for at least 2 hours before serving.

Notes

You can customize the seasonings to taste.
