For the Crust:
- 4 salmon fillets
- 1 can (14 oz) coconut milk
- 2 tbsp red curry paste
- 1 tbsp honey
- 1 tbsp lime juice
- 4 cloves garlic, minced
- 4 tbsp unsalted butter
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh cilantro, chopped
Instructions
1. Prepare the Crust:
- In a bowl, whisk together coconut milk, red curry paste, honey, and lime juice. Set aside.
- Season salmon fillets with salt, pepper, and paprika.
- Heat a large skillet over medium heat. Add 1 tbsp butter and sear salmon for 3-4 minutes per side. Remove and set aside.
- In the same skillet, melt remaining butter. Add minced garlic and sauté for 30 seconds until fragrant.
- Pour in the coconut curry mixture and bring to a simmer. Return salmon to the skillet and cook for 3-4 minutes until sauce thickens slightly.
- Garnish with fresh cilantro before serving.
