Classic 30-Minute Beef Tacos – Easy Weeknight Dinner Recipe

Deeply caramelized ground beef with bloomed spices and tortillas toasted in beef fat — ready in 30 minutes, no seasoning packet needed.

  • 1 lb (450g) 80/20 ground beef
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano (Mexican oregano if you have it)
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper (optional)
  • 1 tsp kosher salt
  • 1/2 cup beef broth
  • 1 tsp apple cider vinegar or lime juice
  • 8 small corn or flour tortillas
  • Shredded cheese, lettuce, diced tomato, diced onion, cilantro, lime wedges, salsa, for serving

Instructions

  1. Heat a large heavy skillet (cast iron works best) over medium-high heat with no oil. Add the ground beef, break it into 3-4 large chunks, spread into an even layer, and let it sit untouched for 2-3 minutes until deeply browned on the bottom.
  2. Break up the beef and continue cooking until mostly browned. Push the beef to one side of the pan, add the onion to the rendered fat, and cook 2 minutes until softened. Add garlic and cook 30 seconds until fragrant.
  3. Clear a space in the center of the pan and add the tomato paste, chili powder, cumin, paprika, oregano, onion powder, and cayenne. Toast the paste and spices directly in the fat for 60-90 seconds until darkened and very fragrant.
  4. Stir everything together, season with salt, and pour in the beef broth. Simmer, stirring occasionally, 3-5 minutes until the liquid reduces and clings to the meat rather than pooling. Stir in the vinegar or lime juice off heat.
  5. Push the beef to the edges of the skillet (or use a second dry pan) and lay tortillas directly in the residual fat and browned bits. Toast 20-30 seconds per side until lightly charred and pliable.
  6. Fill tortillas with the beef, top as you like, and serve immediately with lime wedges.

Notes

Do not add liquid until the spices have visibly darkened in the fat — that’s how you know they’ve bloomed. If using ground turkey or chicken, add 1 tbsp oil since there’s less fat to work with. Double the spice-and-tomato-paste mixture and freeze half for a faster version next time.
