Instructions

  1. Preheat oven to 350°F (177°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  5. Gradually add flour mixture to the wet ingredients, mixing until just combined.
  6. Divide dough in half and roll each half into a 9×7 inch rectangle on a lightly floured surface.
  7. For the filling, mix melted butter, brown sugar, and cinnamon until combined.
  8. Spread the cinnamon filling evenly over each dough rectangle.
  9. Roll each rectangle tightly into a 9-inch log, sealing the edges.
  10. Wrap logs in plastic wrap and refrigerate for at least 2 hours until firm.
  11. Remove logs from refrigerator and slice into ½-inch thick cookies.
  12. Place cookies on prepared baking sheets about 2 inches apart.
  13. Bake for 10-12 minutes or until edges are lightly golden.
  14. Allow cookies to cool completely on wire racks.
  15. For the icing, whisk together powdered sugar, milk, melted butter, and vanilla extract until smooth.
  16. Drizzle icing over cooled cookies and let set before serving.
