Cinnamon Peach Crumble Bars

Delicious buttery bars with a sweet peach filling and a cinnamon-spiced crumble topping.

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg
  • 2 cups fresh peaches, peeled and diced
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 cup brown sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mix flour, granulated sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the egg until a dough forms.
  3. Press two-thirds of the dough into the bottom of the prepared pan. In another bowl, toss peaches with lemon juice, cinnamon, and brown sugar. Spread evenly over the crust.
  4. Crumble the remaining dough over the peach layer. Bake for 30-35 minutes or until golden brown. Let cool before cutting into bars.

Notes

You can customize the seasonings to taste.
