For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1 cup cold unsalted butter, cubed
- 1 large egg
- 4 cups fresh peaches, peeled and diced
- 1/4 cup brown sugar
- 1 tablespoon lemon juice
- 2 teaspoons ground cinnamon
- 1 tablespoon cornstarch
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a 9×9 inch baking pan with parchment paper.
- In a bowl, mix flour, granulated sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in egg until dough forms. Press half the dough into the pan.
- In another bowl, toss peaches with brown sugar, lemon juice, cinnamon, and cornstarch. Spread evenly over crust.
- Crumble remaining dough over peach layer. Bake for 30-35 minutes until golden. Cool completely before cutting into bars.
