Cinnamon Peach Crumble Bars

Buttery, crumbly bars with a sweet peach filling and a hint of warm cinnamon, perfect for summer desserts.

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup cold unsalted butter, cubed
  • 1 large egg
  • 4 cups fresh peaches, peeled and diced
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons ground cinnamon
  • 1 tablespoon cornstarch

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a 9×9 inch baking pan with parchment paper.
  2. In a bowl, mix flour, granulated sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in egg until dough forms. Press half the dough into the pan.
  3. In another bowl, toss peaches with brown sugar, lemon juice, cinnamon, and cornstarch. Spread evenly over crust.
  4. Crumble remaining dough over peach layer. Bake for 30-35 minutes until golden. Cool completely before cutting into bars.
