For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 1 large egg
- 3 cups fresh peaches, peeled and diced
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/4 cup brown sugar
- 1 tablespoon cornstarch
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a 9×9-inch baking pan with parchment paper.
- In a large bowl, mix flour, granulated sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in egg until dough forms.
- Press two-thirds of the dough into the prepared pan. Bake for 10 minutes.
- In another bowl, toss peaches with lemon juice, cinnamon, brown sugar, and cornstarch. Spread over the baked crust.
- Crumble remaining dough over the peach layer. Bake for 25-30 minutes until golden brown.
- Cool completely before cutting into bars.
