Cinnamon Peach Crumble Bars

Delicious buttery bars with a sweet peach filling and a cinnamon-spiced crumble topping.

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg
  • 3 cups fresh peaches, peeled and diced
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a 9×9-inch baking pan with parchment paper.
  2. In a large bowl, mix flour, granulated sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in egg until dough forms.
  3. Press two-thirds of the dough into the prepared pan. Bake for 10 minutes.
  4. In another bowl, toss peaches with lemon juice, cinnamon, brown sugar, and cornstarch. Spread over the baked crust.
  5. Crumble remaining dough over the peach layer. Bake for 25-30 minutes until golden brown.
  6. Cool completely before cutting into bars.

Notes

You can customize the seasonings to taste.
