Cinnamon Cream Cheese Stuffed Cookies

Soft and chewy cookies with a sweet cinnamon cream cheese filling.

For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until combined.
  5. In a small bowl, mix cream cheese, powdered sugar, and cinnamon until smooth.
  6. Take a tablespoon of cookie dough, flatten it, and place a teaspoon of cream cheese filling in the center. Cover with another tablespoon of dough, sealing the edges.
  7. Place cookies on prepared baking sheets and bake for 12-14 minutes, or until edges are lightly golden.
  8. Let cool on baking sheets for 5 minutes before transferring to a wire rack.
