Cinnamon Cream Cheese Stuffed Cookies

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, beat cream cheese, powdered sugar, and cinnamon until smooth. Chill for 15 minutes.
  3. In another bowl, cream butter and sugars until fluffy. Add eggs and vanilla, then mix in flour, baking soda, and salt until dough forms.
  4. Scoop dough, flatten slightly, add a teaspoon of cream cheese mixture, then seal with another dough piece. Place on baking sheet.
  5. Bake for 10-12 minutes until edges are golden. Cool on wire rack.
