Cinnamon Churro Cheesecake Bars

A delicious fusion of churros and cheesecake in bar form, with a cinnamon sugar crust and creamy filling.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 tsp ground cinnamon
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 2 tbsp butter, melted
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, 1/2 cup melted butter, and 2 tsp cinnamon. Press firmly into the prepared pan.
  3. In another bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Pour over crust.
  4. Bake for 25-30 minutes until center is set. Let cool completely.
  5. Mix 2 tbsp melted butter with 1/4 cup sugar and 1 tsp cinnamon. Drizzle over cooled bars and spread evenly.
  6. Chill for at least 2 hours before slicing into bars.

Notes

You can customize the seasonings to taste.
