Cinnamon Cheesecake Cookies

Soft, chewy cookies with a cream cheese swirl and warm cinnamon flavor, combining the best of cheesecake and cookies in one delightful treat.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 4 oz cream cheese, softened
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together butter, brown sugar, and 1/4 cup granulated sugar until light and fluffy. Beat in egg and vanilla.
  4. Gradually mix in the dry ingredients until just combined.
  5. In a separate small bowl, mix cream cheese, 2 tbsp granulated sugar, and cinnamon until smooth.
  6. Drop tablespoon-sized portions of cookie dough onto prepared sheets. Make a small indentation in each and add a teaspoon of cream cheese mixture. Swirl gently with a knife.
  7. Bake for 10-12 minutes until edges are lightly golden. Cool on baking sheet for 5 minutes before transferring to a wire rack.
