For the Crust:
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 4 oz cream cheese, softened
- 2 tbsp granulated sugar
- 1 tsp ground cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, cream together butter, brown sugar, and 1/4 cup granulated sugar until light and fluffy. Beat in egg and vanilla.
- Gradually mix in the dry ingredients until just combined.
- In a separate small bowl, mix cream cheese, 2 tbsp granulated sugar, and cinnamon until smooth.
- Drop tablespoon-sized portions of cookie dough onto prepared sheets. Make a small indentation in each and add a teaspoon of cream cheese mixture. Swirl gently with a knife.
- Bake for 10-12 minutes until edges are lightly golden. Cool on baking sheet for 5 minutes before transferring to a wire rack.
