For the Crust:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp cinnamon
- 1/4 cup granulated sugar (for coating)
- 1 tsp cinnamon (for coating)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together butter and granulated sugar until fluffy. Mix in vanilla extract.
- Gradually add flour and mix until a dough forms. Roll into small balls and flatten slightly.
- In another bowl, beat cream cheese, powdered sugar, and cinnamon until smooth.
- Place a small dollop of cream cheese mixture in the center of each dough round. Fold edges over slightly to encase the filling.
- Bake for 12-15 minutes or until edges are golden. Let cool slightly.
- Mix cinnamon and sugar for coating. Roll warm cookies in the mixture to coat evenly.
