For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup granulated sugar (for coating)
  • 1 tbsp ground cinnamon (for coating)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and 1 cup sugar until light and fluffy. Beat in egg and vanilla.
  3. Whisk together flour, baking powder, and salt in a separate bowl. Gradually add to the butter mixture until combined.
  4. In another bowl, mix cream cheese and powdered sugar until smooth.
  5. Roll dough into 1-inch balls, flatten slightly, and place a small dollop of cream cheese mixture in the center. Fold dough over to seal.
  6. Combine remaining sugar and cinnamon in a shallow bowl. Roll each cookie in the mixture to coat.
  7. Place cookies on prepared baking sheets and bake for 12-15 minutes until edges are golden. Cool before serving.
