Churro Cake

A moist cinnamon cake with a sweet cinnamon sugar topping that captures the delicious flavor of classic churros.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/4 cup melted butter for topping
  • 1/2 cup granulated sugar mixed with 1 tablespoon cinnamon for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together 1/2 cup butter and 1 cup sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Gradually mix in the flour mixture alternately with the milk, beginning and ending with flour. Pour batter into prepared pan.
  5. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let cool in pan for 10 minutes, then transfer to a wire rack.
  6. Brush top of warm cake with melted butter, then sprinkle generously with cinnamon sugar mixture. Serve warm or at room temperature.
