Instructions
- In a microwave-safe bowl, melt chocolate chips in 30-second intervals, stirring until smooth. Let cool slightly.
- In a large mixing bowl, beat softened cream cheese and powdered sugar until smooth and creamy.
- Add the melted chocolate and vanilla extract to the cream cheese mixture and blend until well combined.
- In a separate bowl, whip the heavy cream to stiff peaks and gently fold it into the chocolate cream cheese mixture to create a light mousse.
- Spread half of the chocolate mousse evenly over the chocolate cookie crust.
- Spoon the cherry pie filling over the mousse layer evenly.
- Spread the remaining chocolate mousse over the cherry layer.
- Refrigerate the pie for at least 4 hours or overnight to set.
- Optional: Before serving, top with whipped cream and garnish with shaved chocolate or fresh cherries.
Notes
