Ingredients
Scale
- ½ cup (1 stick / 113 g) salted butter, softened
- 1 package (8 ounces) cream cheese, softened
- 1 ½ cups (300 g) granulated sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 2 ¼ cups (282 g) all-purpose flour
- 1 cup (126 g) confectioners' sugar, divided
- 3 teaspoons baking powder
- ⅓ cup Christmas sprinkles
Instructions
- Preheat oven to 350°F. Line baking sheets with parchment paper.
- In a large bowl using a hand-held mixer, beat the butter, cream cheese, and granulated sugar until blended.
- Add the egg and vanilla extract; mix well.
- Add flour, baking powder, and half (½ cup) of the confectioners' sugar; gradually beat into the creamed mixture on low speed.
- Gently fold in the Christmas sprinkles until just incorporated.
- Using a 2-tablespoon cookie scoop, scoop dough. Roll each scoop in the remaining ½ cup confectioners' sugar.
- Place approximately 6 dough balls on each lined baking sheet. Slightly flatten each dough ball using the bottom of a glass or your hand.
- Bake for 8-11 minutes, until the tops no longer appear wet.
- Let cookies rest for about 5 minutes before transferring to a wire rack to cool completely.
Notes
For best results, use room temperature ingredients. Roll the dough balls thoroughly in confectioners’ sugar for the classic gooey butter cookie coating. Store cookies in an airtight container to maintain freshness.
