Chocolate Turtle Dream Cake

A decadent chocolate cake layered with caramel, pecans, and chocolate ganache for the ultimate turtle-inspired dessert.

For the Crust:

  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup caramel sauce
  • 1 1/2 cups chopped pecans
  • 1 cup heavy cream
  • 8 oz semisweet chocolate chips

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla. Beat for 2 minutes. Stir in boiling water (batter will be thin).
  3. Divide batter evenly between prepared pans. Bake for 30-35 minutes until a toothpick comes out clean. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  4. For ganache: Heat heavy cream until just boiling. Pour over chocolate chips in a bowl. Let sit for 5 minutes, then stir until smooth. Cool until slightly thickened.
  5. To assemble: Place one cake layer on a plate. Spread with 1/2 cup caramel sauce and sprinkle with 3/4 cup pecans. Top with second layer. Pour ganache over top, letting it drip down sides. Drizzle with remaining caramel and sprinkle with remaining pecans.
