  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup sour cream
  • 1/2 cup semi-sweet chocolate chips
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Mix chocolate cookie crumbs and melted butter until combined; press firmly into the bottom of a 9×9 inch baking pan to form crust.
  3. In a large bowl, beat cream cheese until smooth.
  4. Add granulated sugar and brown sugar; beat until combined.
  5. Mix in pumpkin puree, eggs, vanilla extract, pumpkin pie spice, sour cream, and flour until smooth.
  6. Fold in chocolate chips gently.
  7. Pour filling over crust and spread evenly.
  8. Bake for 45-50 minutes or until center is set and edges are lightly browned.
  9. Cool completely at room temperature, then refrigerate for at least 4 hours before cutting into bars.

Notes

For best results, chill the bars overnight to allow flavors to meld and texture to firm up. Use a sharp knife warmed in hot water for clean slices. These bars can be frozen for up to 2 months.
