Chocolate Peanut Butter Cheesecake Cupcakes

Decadent mini cheesecakes with a chocolate crust, creamy peanut butter filling, and a rich chocolate ganache topping.

For the Crust:

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Line a muffin tin with cupcake liners.
  2. Mix chocolate cookie crumbs with melted butter. Press 1 tablespoon into each liner to form crusts.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in peanut butter and vanilla.
  4. Divide filling evenly among crusts. Bake for 20-25 minutes until set. Cool completely.
  5. Heat heavy cream until steaming, pour over chocolate chips. Let sit 2 minutes, then stir until smooth.
  6. Spoon ganache over cooled cupcakes. Refrigerate at least 2 hours before serving.

Notes

You can customize the seasonings to taste.
