Chocolate Mint Cookies

  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1/2 teaspoon peppermint extract
  • 1/2 cup crushed peppermint candies or candy canes

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, and peppermint extract until well combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips and crushed peppermint candies.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are set but centers are still soft.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra festive touch, drizzle melted white chocolate over cooled cookies. Store in an airtight container at room temperature for up to one week.
