For the Crust:
- 1.5 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 cup mini chocolate chips
- 1.5 quarts vanilla ice cream, slightly softened
- 1 cup chocolate fudge sauce
- Whipped cream for garnish
Instructions
1. Prepare the Crust:
- In a bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy. Mix in vanilla extract and salt.
- Gradually add flour until fully incorporated. Fold in mini chocolate chips. Press half of the cookie dough into the bottom of a 9-inch springform pan.
- Spread softened vanilla ice cream evenly over the cookie dough layer. Drizzle with half of the chocolate fudge sauce.
- Crumble the remaining cookie dough over the ice cream layer. Freeze for at least 4 hours or until firm.
- Before serving, drizzle with remaining chocolate fudge sauce and garnish with whipped cream.
